We had a great weekend and I finally have a minute to sit down and type about it. Jeff has been volunteering at the high school we went to so Friday night is now my shopping night. I hit up the mall and got a few things to add to my Jaguars wardrobe. (not that the Jags are any good) Then we went and met Allie and Brandon for a few drinks which lasted way past my bed time. Saturday Jeff and I woke up and we had an appointment with a builder. My dad came along because he is pretty great at building houses and he understands what I like. I trust his judgement when it comes to houses. We sat there for over an hour picking out a floor plan and going through each room of the house saying what I do want and don't want. The size of their closets are amazing. We went to look through a couple houses they are in the process of being built. I was sold completely based on the closet. We are waiting for her to price it all out and see what it comes out to be. We felt really good leaving that meeting and surprisingly Jeff is all about it. It seems logical to build because I can't really find anything I like and not saying I"m going to have everything I could dream of in the one I build I just have to come to the realization its my first house and I can add things to it down the road. There are lots of things we can do that we don't need to pay an arm and a leg to a builder to do for us. So we are anticipating that e-mail to come.
Jeff and I then took a walk up to the football fields in our neighborhood because the weather was beautiful and we watched Brandon coach his little pop warner football team. We then headed out to dinner with my sister, her husband, and Brandon to watch the Flordia Gators get killed. Sorry to all those gator fans but I am definitely not and it was great to watch them get beat.
Sunday we woke up bright and early and off to tailgate for the Jaguars game. It was absolutely beautiful for the most part. It started heating up a little in the game. Especially since we have 8 seats in a row and everyone is 250 lbs plus. Ha those seats are not made for big boys. I tend to sit on the end because I can not stand having people touch me when Im hot. It's quite humorous to watch all of them squeeze in there. We then ended the weekend with dinner with Allie, Brandon and baby Camdyn who was quite precious especially those silver glitter shoes.
I have to tell you this isn't a healthy weight watchers recipe but Jeff is obsessed with it and it's super easy. Chicken Parmesan in the crock pot. I got it off the blog, A year of Slow Cooking.
Here's the recipe
The Ingredients:
--2-4 boneless, skinless chicken breast halves
--1/2 cup bread crumbs
--1/4 cup parmesan cheese
--1/2 t Italian Seasoning
--1/4 t black pepper
--1/4 t kosher salt
--1 T olive oil
--1 beaten egg
--sliced mozzarella cheese
--favorite jarred marinara sauce
The Directions:
--spread the 1 T of olive oil into the bottom of your crockpot stoneware insert
--whip the egg with a fork in a separate bowl
--mix the bread crumbs with the seasonings and the parmesan cheese in another separate dish
--dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings
--place the chicken breast pieces in the bottom of the crock
--layer 2-3 slices of mozzarella cheese on top
--cover with entire jar of marinara sauce
--close lid and cook on low for 6-7 hours or high for 3-4. If your chicken is still frozen, it will take longer.
I serve it with pasta, but it's up to you. I definitely recommend it and it is extremely easy.
